What is Lasagna Soup?

Lasagna soup is a one-pot twist on traditional lasagna, turning all the layers of noodles, meat sauce, and cheese into a comforting, spoonable dish.

Instead of baking, everything cooks together in a flavorful tomato broth.

The noodles absorb all the goodness from the sauce, and it’s topped with creamy ricotta and melted mozzarella for that signature lasagna feel, without all the extra steps of course.

In a single, cozy bowl, lasagna soup delivers all the comforting flavors of the classic baked dish with a fraction of the effort.

This one-pot wonder combines a rich, hearty tomato-based sauce, savory ground meat or sausage, and tender broken lasagna noodles in a satisfying broth.

Topped with a dollop of creamy ricotta and a sprinkle of melty mozzarella and parmesan cheese, every spoonful is packed with cheesy, herby goodness.

Perfect for busy weeknights or chilly evenings, this easy lasagna soup is a crowd-pleasing, family-friendly meal that delivers maximum comfort with minimal fuss. Let’s get started!

Why You’ll Love This Lasagna Soup

  • Convenient-  For many, the lengthy baking and layering process is a barrier to making classic lasagna. Lasagna soup can be ready in a fraction of the time, often under an hour, making it an ideal choice for a busy schedule.
  • Great for meal prep– You can easily make a large batch of the soup base ahead of time and store it in the fridge or freezer.
  • Adaptable for healthier needs– Recipes can easily be modified to fit various diets. Use lean ground turkey or a plant-based alternative for a lower-fat option, or incorporate plenty of fresh vegetables like spinach or bell peppers.

Ingredients

Olive Oil – Used to sauté the aromatics and brown the meat. It adds a light, savory base flavor and prevents ingredients from sticking to the pot.

Onion – Creates a sweet, savory foundation for the soup. As it cooks, it softens and blends into the broth, providing depth and aroma.

Garlic- Infuses the soup with rich, savory notes and adds signature Italian-style warmth to the broth.

Tomato Paste – Concentrated tomato flavor that thickens the broth slightly and gives the soup a deep, rich color.

Ground Beef – Adds hearty meaty flavor, classic to traditional lasagna. Use lean beef to avoid excessive grease.

Italian Sausage – Provides bold, seasoned flavor and a touch of spice. You can use sweet, mild, or spicy depending on your preference.

Tomato Basil Sauce – Acts as the tomato base of the soup, already seasoned with basil for added flavor and convenience.

Beef Broth – Forms the savory, flavorful liquid base of the soup, balancing the richness of the meat and tomatoes.

Heavy Cream – Stirred in at the end to give the broth a smooth, creamy texture and mellow out the acidity of the tomatoes.

Salt, black pepper, red chili flakesm  Italian seasoning – This blend brings balance. Salt enhances overall flavor, black pepper adds mild heat, chili flakes give optional spiciness, and Italian seasoning ties everything together with herbs like oregano, thyme, and basil.

Lasagna Noodles – Break them by hand into bite-sized pieces. They soften in the soup and give you the classic lasagna feel without layering.

Fresh Mozzarella – Placed on top or melted into the soup just before serving for that gooey, cheesy lasagna finish.

How To Make Lasagna Soup

1. Saute

In a large pot, heat olive oil over medium heat. Add the chopped onion and cook for 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.

2. Add Tomato Paste

Stir in the tomato paste and cook for about 1 minute to “toast” it. This step deepens the tomato flavor and removes any raw taste..

3. Brown the Meat

Add ground beef and Italian sausage to the pot. Cook until browned, breaking it up as it cooks. Drain excess grease if needed.

4. Build the Base

Pour in tomato basil sauce and beef broth. Stir well, scraping up any bits from the bottom of the pot. Season with salt, pepper, red chili flakes, and Italian seasoning.

5. Simmer

Bring the soup to a gentle boil, then reduce heat to low and simmer for 15–20 minutes to let the flavors develop.

6. Cook the Noodles

Add the broken lasagna noodles directly into the soup and cook until tender, about 10–12 minutes. Stir occasionally so they don’t stick together.

7. Make it Creamy

Stir in the heavy cream and let simmer for another 3–5 minutes until rich and silky.

8. Prepare ricotta mixture

In a small bowl, mix together ricotta cheese, parsley, and Parmesan until smooth.

9. Serve and Enjoy!

Ladle the soup into bowls, top with a spoonful of the ricotta mixture, and place a slice of fresh mozzarella on top. Let it melt slightly before serving.

Serving Ideas

Garlic Bread or Breadsticks on the Side

Serve with warm, buttery garlic bread, cheesy breadsticks, or toasted baguette slices. Perfect for dipping into the rich tomato broth and soaking up every last drop.

Make it a Soup Bar

Perfect for gatherings, you can set up a toppings bar with:

  • Ricotta mixture
  • Shredded mozzarella or provolone
  • Parmesan cheese
  • Chili flakes
  • Fresh herbs
  • Croutons or mini garlic knots

Salad Pairing

Balance the richness of the soup with a fresh salad:

  • Classic Caesar salad
  • Italian chopped salad with salami, olives, and pepperoncini
  • Simple mixed greens with balsamic vinaigrette

Destiny’s Tips for Success

  • Don’t Overcook the Noodles– Add the lasagna noodles toward the end of cooking and simmer until done. If they sit too long in the soup, they’ll soak up the broth and become mushy. For meal prep, cook the noodles separately and add them to each bowl when serving.
  • Brown the Meat for Maximum Flavor– Take time to fully brown the ground beef and Italian sausage before adding liquids. This step develops deep, caramelized flavor and gives the soup a richer, “slow-cooked lasagna” taste.
  • Add Dairy at the End– Stir in the heavy cream only after the soup is done simmering and heat is reduced. Adding it too early can cause curdling. The same goes for topping with mozzarella or ricotta, add just before serving so the cheese melts perfectly without breaking.

Storage and Reheating

How to Store

1. Refrigerator

Let the soup cool completely, then store it in an airtight container for up to 3–4 days.  If you’re planning ahead, store the noodles separately from the soup. This keeps them from becoming too soft or absorbing all the broth. Keep the ricotta topping in its own sealed container in the fridge for up to 3 days.

2. Freezer

Lasagna soup freezes best without the noodles or cheese. The broth, meat, and sauce mixture can be frozen in freezer-safe containers or bags for up to 2–3 months.
Thaw in the fridge overnight, then reheat and add freshly cooked noodles and cheese before serving.

Tips for Reheating

On the Stovetop:

  • Pour soup into a pot and warm over medium heat, stirring occasionally until hot. If the soup thickened in the fridge, add a splash of broth or water.

In the Microwave:

  • Heat individual portions in a microwave-safe bowl for 1–2 minutes, stirring halfway.
  • Top with ricotta mixture and mozzarella only after reheating so the cheese melts fresh and creamy rather than separating.

This recipe is so easy and FILLED WITH FLAVOR! Once all the ingredients are together, if you do well around the kitchen, the noodles will be the only thing that takes the longest time.
I did sub a few things like almond milk instead of heavy cream to cut some calories but it did not affect the thickness or flavor. I also am not a big fan of the ricotta dollop on top, but I tried lol. Overall, this recipe is flavorful, thick, comforting, and so good for all the family, and it freezes very well!
