How To Make Flavorful Oxtails

1. Season the Oxtails

Pat the oxtails dry with paper towels. Generously season them on all sides with Zestiny All Purpose Blend and Zestiny Garlic Butter Blend.

Add the Worcestershire sauce, soy sauce, browning sauce, and ground allspice. Toss everything together until each piece of oxtail is evenly coated.

2. Add the Vegetables

Add the diced carrot, red bell pepper, green bell pepper, habanero pepper, onion, green onions, and fresh thyme to the seasoned oxtails. Mix everything together until the vegetables and seasonings are evenly distributed.

For even more flavor, cover the oxtails and allow them to marinate in the refrigerator before cooking.

3. Brown the Oxtails

Heat a large Dutch oven or heavy-bottomed pot over medium heat. Add the brown sugar and allow it to melt and caramelize, watching it closely to prevent it from burning.

Remove the oxtails from the marinade, reserving the vegetables and any liquid left behind. Carefully add the oxtails to the caramelized brown sugar and sear them in batches until they develop a deep brown color on all sides.

Avoid overcrowding the pot, as this can cause the oxtails to steam instead of brown.

Once browned, remove the oxtails from the pot and set them aside.

4. Build the Gravy

Add the reserved vegetables and marinade to the same pot. Add the ginger paste and minced garlic, then cook for a few minutes until fragrant, scraping up any flavorful browned bits from the bottom of the pot.

Return the browned oxtails to the pot and pour in the beef broth. The liquid should come most of the way up the oxtails without completely covering them.

5. Cook until Tender

Bring everything to a gentle simmer, cover the pot, and reduce the heat to low.

Allow the oxtails to cook slowly until they are fork-tender and the meat easily pulls away from the bone, about 2½–3½ hours depending on their size.

Check the oxtails occasionally while they cook and stir as needed to prevent anything from sticking to the bottom of the pot. If the liquid reduces too much before the oxtails are tender, add a little boiling water as needed.

Ingredients

  • 2 lb oxtails
  • Zestiny All Purpose Blend to taste

  • 1 medium carrot diced
  • ½ red bell pepper diced
  • ½ green bell pepper diced
  • 1 habanero pepper diced
  • ½ medium onion diced
  • 3 green onions chopped
  • 4 –5 sprigs fresh thyme
  • 2 tbsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 2 tbsp browning sauce
  • 1 tsp ground allspice
  • ¼ cup brown sugar
  • 1 tbsp ginger paste
  • 1 tbsp minced garlic
  • 1 15 oz can butter beans, drained
  • 2 tbsp ketchup
  • 5 cups beef broth

Instructions

  • Pat oxtails dry and generously season with Zestiny All Purpose Blend and Zestiny Garlic Butter Blend. Add Worcestershire sauce, soy sauce, browning sauce, and allspice, then toss until evenly coated.
  • Add carrots, bell peppers, habanero, onion, green onions, and thyme. Mix well. Cover and marinate in the refrigerator, if desired.
  • Heat a large pot over medium heat. Add brown sugar and allow it to melt and caramelize. Remove oxtails from the marinade, reserving the vegetables and liquid. Brown the oxtails on all sides, then remove from the pot.
  • Add the reserved vegetables and marinade to the pot along with the ginger paste and minced garlic. Cook for a few minutes, then return the oxtails to the pot and pour in the beef broth.
  • Bring to a simmer, cover, and cook on low for 2½–3½ hours, or until the oxtails are fork-tender. Add boiling water as needed if the liquid reduces too much.
  • Stir in the butter beans and ketchup. Simmer uncovered for 15–20 minutes, or until the gravy has thickened. Taste and adjust seasoning as needed, then serve hot with rice.
