Chicken Alfredo Soup

This Chicken Alfredo Soup is rich, creamy, and irresistibly cheesy and it's loaded with tender bites of seasoned chicken, broken lasagna noodles, and broccoli all swimming in a silky garlic-Alfredo broth.

Ingredients

  • 2 large chicken breasts
  • 2 tbsp olive oil
  • ½ cup salted butter
  • ½ shallot finely diced
  • 2 tbsp minced garlic
  • 16 oz lasagna noodles broken
  • 2 cups heavy whipping cream
  • 4 cups chicken broth plus more if needed
  • 1 cup steamed broccoli chopped
  • 5.3 oz garlic & herb Boursin cheese
  • 2 cups freshly grated Parmesan cheese
  • 1 cup mozzarella cheese
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 tbsp chopped parsley

Instructions

  • Season chicken with salt, pepper, paprika, and Italian seasoning. Heat olive oil in a large pot over medium heat and sear chicken 4–6 minutes per side until about 70% cooked. Remove, chop, and set aside.
  • In the same pot, melt butter. Add shallot and garlic; sauté until soft and fragrant.
  • Stir in Parmesan and Boursin cheese until melted. Slowly add heavy cream and chicken broth, stirring constantly.
  • Add chicken back to the pot and simmer 6–8 minutes until fully cooked.
  • Stir in noodles and cook 10–12 minutes, stirring occasionally, until tender.
  • Add broccoli, mozzarella, and parsley. Stir until melted and creamy. Adjust seasoning and add broth if needed. Serve warm.
