In a large bowl, add the lamb chops and 1 tbsp olive oil. Season with salt, pepper, and Zestiny Garlic Butter Blend. Toss until evenly coated.
In a separate bowl, mix together all of the ingredients for the cheese topping.
In another bowl, combine the panko breadcrumbs and melted butter.
Heat the remaining olive oil in a cast iron skillet over medium-high heat. Once hot, sear the lamb chops for 2–4 minutes per side, or until cooked to your desired doneness. Remove from heat.
Add about 1/4 of the it cheese topping to each lamb chop, followed by about 2 tbsp of the breadcrumb topping.
Place under the oven broiler on high for about 5 minutes, or until the cheese is melted and the breadcrumbs are golden brown.
