Ingredients

  • 4 lbs Yukon Gold potatoes peeled and cut into chunks
  • 1 tablespoon salt for boiling water
  • 1 stick ½ cup unsalted butter
  • 8 oz cream cheese softened
  • 1 cup whole milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • Fresh chopped parsley for garnish (optional)

Instructions

  • Peel and cut the potatoes into evenly sized chunks.
  • Place the potatoes in a large pot and cover with cold water. Stir in the tablespoon of salt.
  • Bring to a boil and cook for 18–20 minutes, or until the potatoes are fork tender.
  • Drain the potatoes well and let them sit in the colander for 2–3 minutes so excess moisture evaporates.
  • Return the potatoes to the warm pot.
  • Add the butter, cream cheese, garlic powder, onion powder, salt, and pepper.
  • Mash until mostly smooth.
  • Slowly pour in the milk until you reach your desired consistency.
  • Taste and adjust the seasoning if needed.
  • Garnish with fresh parsley and an extra pat of butter before serving.
